riding her, we will take her to open shows and possibly arab shows if we
 can get her papers.

Why not?  :-)  We have started several on the endurance circuit in their
mid-teens.  One of the geldings I'm riding now was an old 4-H horse, and
did 2 LDs at 15, 1 LD and 415 endurance miles last year, and has already
done 1 50-miler this year.  He is having a ball!  The other gelding we're
starting right now did his first ride last year at 12 and has done a 50
and a 75 this year.  We started one stallion at 15 that had spent the
previous 8 years in a box stall, and we've also started several teenaged
broodmares over the years, many of which weren't even broke to ride
previously.  Nothing wrong with riding endurance on a 16-year-old, if
she's sound and healthy.  :-)
