This is the standard web bug. If you have Outlook Express (I assume other email readers have a similar thing). Go to Tools, options, security and then check the box by "block images and external..." When any image references come in it puts a click on banner at the top of the email and you can then decide if you want to see the images from your favorite web store or not.

It is not a big deal, and one shouldn't need some special soft ware to deal with it. You always know if you really want to look at the images sent in an email by a friend or a store you patronize. The possible exception would be a phishing email from someone pretending to be a store or paypal or ebay. These are usually pretty obvious in themselves. The best defence is not to click on the links they give, but to go directly to the website the way you usually do and find out if your paypal, visa or bank is really trying to get in touch with you. You usually find that they are not. I have also noticed that legit. emails from my financial contacts have in general stopped including clickable links, so the inclusion of a clickable link is a cause for caution in and of itself.

How many cookies you want to have on your computer, is a personal decision. You can set in your browser everything from none to accept all. You can also set up a list of sites that can send cookies. Personally, I use Microsoft's default and it seems to be ok for my usage.
