That slaughter rumor is not true.  Yes, the guy raised the horses to sell, 
just like any other horse breeder.  If some of the horses did not turn out 
to be good mounts they were sent to slaughter.  That is the norm over there. 
 These horses were not raised specifically for meat.

I know that there are some breeds that have been developed in Europe 
specifically for meat production.  They are based off of the draft breeds.  
I also believe that the Percheron is a popular meat horse over there.  I 
guess they would be the black angus of horses.
