I have always heard that it is the process of the horse's body digesting the "roughage" rather than just digesting alfalfa.  If your horses are not used to eating the alfalfa, it might be too much for their system.  My horses get only grass hay and a nutritional supplement daily and they do just fine in the winters up here.  Of course, this is just my opinion from our experiences with our own horses.

several people have told me that the process of digesting the alfalfa is what keeps them warm during the winter, and they won't be able to withstand the elements as well if they are being fed grass hay and grain.
