What you say below is very interesting and sounds good but my question is
what about after the vet check?  The first ride I did I was fine (my horse
didn't bolt at every opportunity) but then after the vet check I waited
until it looked like the 'coast was clear' but it was one of those rides
where the 50's had to do a second lap and some racers came tearing by me and
it was not pretty.  My horse recovered ok after the 'bolt' but then of
course others came by and it was the hardest work to keep her back and try
stay at the pace I wanted.  Everyone says, wait til everyone has gone or
start at the back but when horses recover well at the vet checks it is like
the start all over again.  We've done a lot of work to improve her listening
to me but then again, I haven't done an endurance ride on her since.

What are some things that others have done to help teach pacing?<<

Start 5, 10, 15 minutes after the pack.  Even longer is OK, too.
What I've done is I let the excited horse trot *very* slow at 
the start and ask for a walk every couple minutes.  If the horse
will do even a step or two of a flat-footed walk, I let her trot
again.  Using this method, they learn that if they walk they'll
get rewarded with being allowed to move faster.  My mare that
started 50s in 2004 can walk away from camp with the pack on a 
loose rein now.  She has her moments when she gets excited (like
when horses pass us), but we just go back to that slow trot/walk
method and she relaxes again.  Personally, I don't feel you can
really train this until you're at a ride since no other conditions
replicate this situation.  So, I consider *every* ride a training
ride. :)
