I think this is a very important point!

To take it even further, I start all babies/greenies by walking
them on the trails until they are "broke" at the walk on trails.
I don't trot or canter on the trail until they can walk calmly
on a loose rein and handle obstacles and spooky situations with
a good mind. Allowing speed changes their response to a flight
response and I don't feel they learn as well as they do at a walk.

So, then, the same continues as they mature mentally & physically,
and all training rides start (and end) at a walk and endurance
rides as much as possible (per my earlier email about the slow
trot and asking for the walk until they click and start walking
on their own).
