I've been feeding beet pulp with black oil sunflower seeds and flax over
the
winter and have a ride coming in three weeks. Do I cut out the fats now or
wait, or don't bother to stop the fats at all?

It depends on the amount of sunflower seeds and flax you're feeding at a
time, but because both seeds also provide a nice amount of carbs and other
goodies, I'm okay with continuing to feed a moderate amount in their beet
pulp throughout the ride.  If you feed a large amount, say more than half
beet pulp and half oil seeds, then you could cut back in the proprtion of
oils eeds a day or two before the ride, and resume the day after the ride.
