Actually not so. Before special sweet corn
was developed, corn on the cob was just field corn picked at just the right
maturity. It is sweet, but after a couple of more days of growing the
sugar content goes down, the starch content goes up and yuk!. The
evolution continues, I now plant one of the new super sweet varieties and find
that it is edible for almost a month, as opposed to a couple of weeks for the
standard variety I used to plant.
