There is always drinking water for the horses at all rides I've every seen/been to. Sometimes it's provided by the riders if the RM hasn't been able to organize it (ref: 2001 XP:) - beyond horse drinking water, there MAY also be water for cooling and cleaning the horses. Each ride will handling people water differently so you need to be prepared to send fluids for yourself (for the hold and the next leg of the ride).
