I'll just add this two cents to the discussion (I haven't read all the posts):

I do not own a bridle with a bit.  I train all my horses in a hackamore.  As
soon as I trust them enough, I switch to a "non-mechanical" hackamore (that does
not have the long leverage of hinged hackamores).  My horses have always done
well in them, and can easily eat and drink with them on.  I've long felt that
this is the most comfortable for the horse.  YMMV.
