[RC] saddle fit - Ridecamp Guest

An endurance riding friend suggested you people were the experts on saddle fit. 
So if you don't mind I have a question:

I'm trying out a second hand wintec all-purpose on my gelding. He's currently 
using a wintec dressage which I bought for the mare but it fits him perfectly. 
So I took the gullet out of the dressage saddle and put it in the all-purpose 
and went for a trail ride today. I use a cashell wedge pad (need it under 
either saddle due to old boy's sway back). The saddle seemed to fit us both 
fine BUT afterward I noticed the hair under the back of the saddle was 
rubbed/scruffed as if there had been a slight left/right movement of the back 
of the seat. Also the saddle pad crept backwards a bit, as did the cashel pad.

So any opinion as to the cause?

When adding the cashell pad do I have to consider a wider gullet?
