Karen is 100% correct.  Hunching your shoulders can be caused by stress, a
difficult horse, a bad saddle, or poor posture. But the cure is always the
same -- you need to keep saying to yourself "sit up straight, shoulders
back, look proud".  You may have to say it every quarter mile for the whole
50 miles...but by the end of the ride you won't have an aching back, and
you'll look and feel much better.
