At least in FL they are normally run by fox hunting clubs. If you are interested in the competition it is a timed even where someone sets a "target time" for the course - not too fast and not too slow. You ride in teams of two. The team closet to the target time is the winner. I don't worry about the winning - I use them for training.

After you sign in you can go out at any time. The course is a big loop with jumps. The jumps have "go arounds." You can either choose to ride the jumps or ride on the flat. When you go out you check in with the timer (give him you card and he gives you a number). They you ride the course at your own pace.

The thing I like about the Hunter Pace is they are a great place to introduce horses to events with lots of horses in front and in back. You can, however, control the stimuli by when you leave.
