A 7.5 mph pace is an 8 minute mile which translates
into an 6:40 50 or
3:20 25. Of course the ride time would be a bit
longer
because you need
to stop for water, it takes a few minutes when you
come into the check,
etc. Nonetheless, that is a pretty decent ride time.
Just keep on
plugging and you do quite fine with that pace.

As a two time Turtle Award winner this past season I
can speak to this question with some authority.  It
would have been three but Dawn Carrie waited for me at
the finish in order to claim this prestigious award. 
How was the message from the Meanwhile Ride Dawn? ;-)

If your goal is just to finish within the time limit
you don't need to go nearly this fast.  On a 50 mile
ride you have 12 hrs to complete.  If you subtract two
hours for holds and 1 hrs for rest stops, pee breaks,
getting lost or what ever leaves you with 9hrs to
complete a ride safely within time.  This works out to
slightly faster than 5.5 miles an hour.  No need to
canter, relax take it easy, and enjoy the scenery. 
You'll get the same T-shirt as everyone else.
