I did the same unwise thing with a QH once.
This horse was fine in a pair, but I decided to drive him single one
day. Upon returning, I did exactly as you mentioned....took the bridle
with blinkers off first. He spun around and wiped out a bunch of our split
picket fence before I caught him.
one of the worst buggy wrecks i ever saw was a dadgum purebred arab
pulling a two wheeled cart. the gal was getting ready to unhook the
cart, and decided to take the bridle(with blinkers) off first, bad
idea!. that horse took off like a rocket,
