Take her horse camping and leave your electric pen at home.  At the camp, 
don't use a corral, tie her to the trailer.  If she's never been tied to a 
trailer before, practice that at home first.  She will not be able to hold 
it from Friday afternoon to Sunday afternoon :)  Try to watch her and like 
Chris said, praise lavishly if you catch her in the act (right after she 
finishes).  Once she begins to realize it's ok to pee outside her pen, she 
should mellow out on this issue.

You may need to tie her to the trailer at a ride or two also to really 
imprint on her that it's ok to go when not in the pen.
