Re: [RC] Eating at a ride - Diane Trefethen

Those were great tips...lets talk more food on ridecamp. We can't possibly fight about that!!! right??? ha ha
Lucinda

LOL! Okay.

Small shrimp platter with dip, mushroom logs. Buy a small bag of frozen chunks of fruit and bring a small bottle of mayo. For dinner Friday, pour the partially thawed fruit into a bowl and add the mayo for a salad or serve on a leaf of lettuce. Get a selection of sliced meats and cheeses and small rolls (the kind that are soft on the inside and crunchy on the outside). Set out with mustard, butter, mayo, sliced tomatoes and the left over lettuce from last night for mini sandwiches at the lunch stop. If you are into dessert for Friday night, buy a GOOD, not grocery store, angel food cake, a bottle of Redi-whip and a small box of frozen raspberries or strawberries (or you could buy fresh berries and slice and freeze them Thursday). Spoon the thawed, drained berries onto slices of the cake and top with whipped cream. Or bring Baklava. That keeps very well and is soooo delicious. Not great for those who need to watch their sugar intake, though.

Anything you can take to a picnic, you can bring... just go first class. If you are going to eat it Friday, just keep it cool. If you've bought/made it Friday or Thursday evening, it won't have time to spoil. Be a bit more careful for the lunch stop. Avoid pre-done stuff and lean towards put-togethers.
