You posted with an incomplete address so I can't send this personally. Ginger, have you looked at the extensive archives at endurance.net for "rider food"? There is so much data on this in the archives.

We've discussed this in excruciating detail within the last quarter. Welcome to the world of endurance, if you supply your full e-mail adress, maybe people could e-mail their suggestions privately.
