Has anyone ever seen or heard of "organic" beet pulp?  I am looking for
some since I understand that beet pulp tends to collect a lot of fat
soluble
chemicals during the sugar extraction process.

Nah, it doesn't.  Mostly because there aren't any fat soluble chemicals used
in the first place.  The only "chemical" used in beet pulp processing is
water, heat, centrifugal force and carbolic lime.  The only remnant of the
carbolic lime is calcium carbonate, the source of the calcium content in
beet pulp (which is a good thing).  You can see the extraction process here:

but if you're looking for dastardly chemicals and effluents, you're going to
be pretty disappointed. :-))

The notion of chemicals in beet pulp is just an urban myth.  Don't get
suckered into it.
