Sounds like a pain response to me if she's sweet and responsive on the 
ground.

I'd check:
Teeth--a real equine dentist that uses a speculum to get those last 
molars
Find a reliable chiro check her spine from poll to tail.

Does the saddle fit?  Might not fit the same post pregnancy.

Doubt very much that it's hormonal.
