what is funny to me, and i am just guessing here, could someone
actually walk/run the entire course while leading their horse, still
get a completion and possibly awards?

Yes, in fact, Jeff Johnson did just that in the Prescott Man against
Horse Race (an endurance ride and foot race held on the same trail at
the same time). He completed both the 50 mile endurance ride and the 50
mile ultra-marathon by leading his horse the whole way (and stopping at
the vet checks....which wasn't required for the runners).

I do not know how he placed in either contest.

If I remember correctly, Julianne Johnson did the same thing at Fort
Schellbourne(except there was no foot race as part of the event) back in
2000 (the year the Johnson's won the Bill Thornburg Family Award).
