Depends on his saddlebred lines. If he's a three gaited saddlebred I doublt very seriously if he has a gait (other than walk, trot, canter and gallop) in him. If he's a five gaited saddlebred he might and you might be able to do it.

I have a TWH, who has a really rough trot, so I
gait him most of the time. I wish he had a better
trot, as it would be nice to have the option. also,
I miss the sense of drive and impulsion in a trot-
gaiting just isn't the same.
So were I you, I would train in both gaits, as it will
give you some flexibility. On a long ride, it is nice
to have a variety of gaits to choose from.
