Ummm...Angie?  Care to make a video?  

I don't have any trotting video, but I do have a good video of proper
form for one handed, throw, swing forward, pop the wrist back bringing
the sponge back to the hand sponging at a walk as my horse crosses a wide
stream. If someone filmed you trotting by sponging on the fly you'd be
past them before you popped it back up.  I honestly have considered
trying to do a "how to" for folks...my contribution to education. 

Some people are successful with other techniques. They use the biothane
leashes and may yank straight upwards with their whole arm and catch it
as it flies up, but I don't think that works as smoothly on the fly. My
method is throw slightly forward and down, trot past and swing the sponge
out behind you in an arc, then swing it back forward till it's about
level with your hand then pop the wrist so it flies right back into your
hand. Your string needs to be the perfect length though so it won't scuff
the ground as it goes forward, etc. If I have to sponge over to the left
(I'm right handed) I throw over to the left, then make an "O" with the
fingers on my left hand around the string, then yank with my right so it
goes straight up to the left hand.

If I can make a short sponge on the fly video soon I'll just put it on
You Tube and let the world see how we amuse ourselves during long hours
in the saddle. :-)
