I'm coming late to the game, sorry.

Keep in mind, I'm no dressage queen.  I ask for a neutral or slightly rounded
back, not inverted/ventroflexed.  Sometimes that means I have to also push him
into the bridle to the point that his face is vertical, and sometimes he does
it well enough even with his nose poked out, as you say.  Here's a couple
pictures that I think show what I mean.

So, I think you're on the right track.  (But then like I said, I'm no dressage
queen!)

nose poked out and even have his head up a bit - just as long as he
isn't using his lower neck muscles.  This is quite a bit less than we
are working on in his lessons, but those only last an hour in a nice,
flat arena.  :)
