What is the best cleaner to use to keep this off, and does it help
to cover the saddle with a cloth to keep this from happening?

A saddle maker recommmended to me Bee Natural Leathercare Saddle Oil #1. It
has fungicides in the oil to help prevent mildew and mold.
I used Fiebings Saddle Soap to clean with first and then the Bee Natural
Oil afterwards. I am sure there is probably a Bee Natural saddle soap
available as well.
