I am told you can but have to be careful of hitting the cab if you turn too sharply.  If you expect to do lots of 90 degree turns then could be a problem.  Might be more important to have a truck bed that can handle the wt of the gooseneck.

Can you haul a gooseneck with a shortbed?  Does anyone do that?
Apparently there is a special "sliding" hitch for 5th wheels, but
horse trailers heavier.
