I mentioned the 'neck launching' earlier as I saw a couple Parelli students do it at the St. Paul tour stop back in June.  
 
Might be fun, be certainly doesn't look as elegant and 'medieval' as bowing to receive one's rider.   If you've seen 'Kingdom of Heaven', the King's horse does that in one scene.
