What about trying to figure out a way to set up a highline, and tie the mare just short enough that she can't reach down to the grass...then hang her water and feed up on the side of the trailer where she can reach it?

even if ridecamp is "in a pasture" or "field", surely there is a spot or two without grass that can be reserved just for you.  Just ask ride mgmt to assist you.
