only thing I would do a little different is to make it taller than 8 

foot. 

Oh yes. Didn't notice that. The hot air tends to sit next to the roof
too. If the roof is low, the temp will be much higher underneath.  If you
can have it high enough to allow fans above them that will be much nicer.
The first really hot day this summer I went out and my barn was the
hottest I'd ever felt it. Turned out it was the first time I'd left the
front of the barn covered with a tarp after winter was over and the fans
were blowing down stuffy heated air. I removed the tarp, air started
flowing through the barn and all was good again.

I've seen some barns with low roofs that were so hot they attempted to
put styrofoam insulation above the horse to help out but it didn't much.
I'd go at least 12' tall. If it's a pole barn the only extra cost is the
length of the poles. The partitions don't have to go all the way up.

Also, for materials. Around here we try for rough cut oak. Don't know how
available that is out there. If you have to use a wood that they like you
can buy some metal "chimney flashing" and wrap the wood in the most
tempting chew areas. I've seen someone put carpet over boards...said
their horse couldn't crib off it, his teeth slipped off.
