uh...someone with better mammalian physiology step in here, but basically water is released from the 'energy cycle' from the electron transport chain, which is basically a chain of NAD molecules where H+ jumps from molecule to molecule and releases ATP.  The end of the chain is 0, so when the two H reach the end, wha-la, they make H2O.  Water is USED in the Citric Acid cycle, and neither used nor produced in glycolysis.  When you have a lack of oxygen, the ETC backs up, backing up the Citric Acid (Kreb) Cycle, and then your lactic acid builds up because it cannot go through the CAC.  I use a wall sit in class to demonstrate lactic acid build up.
