[RC] Uising/making yogurt - L gin

I used to make about a halfgallon of yogurt at a time for years for my kids, then added my own frozen/fresh fruit.

Real easy to make--if you want to find out of it is live (as an experiment) or make your own . Heres' how------If it is live it will make yogurt, if not it makes nasty sour milk

"combine in a large bowl"
3 cups powdered milk--add 6 cups warm water. Stir well. Add 1 can evaporated milk or 1 &
2/3 cup
combine separately 1/4-1/2 cup yogurt--- 1 cup milkd from the bowl
Blend until smooth and return to remaining milk. MIx well. Pour into jars (or any container). Incubate at 110-120 degrees untill set. ---(usually 3-12 hours ). Refrigerate."More with less cookbook." -P.264


Now I used to just get my oven warm , then set the whole bowl in there covered till done, usually overnight. I used a candy thermometer. I know if you got it too hot --I think over 125, it killed the cultures. I used to just look for an "ove or active" yogurt cultures Just a plain--but I also used a Dannon with fruit on the bottom and just scooped the top off (and got to eat the fruit for cooks privledge ;)
Also it is important to mix the yogurt with some of it to spread it around better.


Other techniques call for using a heating pad on warm under a jar or bowl, or putting it in a cooler after you get it to the right temp.
I also often skipped the cannned or whole mailk and made it out of powdered milk, which we drink to this day. Walmart and Sams carry the big no name powdered milk (as does Kroger) for about 9.00 and it makes like 6-8 gallons of milk. Carnation is terrible --get the no name it's better.
