Lactase is an enzyme produced in the digestive tract--not in the udder.

Thank you for the correction! Here's a statement from the Wikipedia entry
for raw milk - is this accurate?

Enzymes are destroyed by pasteurization which would aid in digestion. Lactase
is an enzyme (created by bacteria present in raw milk, but not pasteurized)
that aids digestion of the milk sugar lactose, and so some lactose intolerant
individuals can drink non-pasteurized fermented milk products.
