Thanks everyone for all the great advice.  

I'm going to start stuffing them with wet sloppy beet
pulp starting Thursday morning before a Saturday ride.
I mix 2 quarts dry beet pulp, 2 oz electrolytes, and
water in with their normal pelleted feed to make a
mash.  They slop it up like pigs.

BTW, Purina Ultium has beet pulp as the main
ingredient so I'm supplementing more beet pulp on top
of what they are already getting.  Agreed it is a bad
idea to introduce something new to the diet before a
ride.  They also get plenty of coastal grass hay. 
Timothy and Alfalfa are priced like gold here in TX.
