We have a large wooden block in our yard; Lud uses it to chop kindling for starting the fire in the stove and I use it for mounting my horse.  I am training him to walk up next to it and stand still while I mount.  On the trail I use road berms, large rocks, the uphill side of the horse, whatever is available.  The most humorous incident involving my trying to mount my horse at a ride occurred three years ago at Death Valley.  I tried to use the trailer upon which were mounted two porta-potties.  Someone had forgotten to put down the stabilizing foot, and someone else was using one of the units.  When I stepped up on the trailer deck, the whole thing tipped like a teeter-totter, and a loud scream came from inside the occupied unit.  OOOOPS!!!   I hastily apologized, found another way to mount my horse and took off on the second leg of the day's ride......

I climb up on the trailer fender and Liya just comes right up and stands still for me.  It is pretty good for a horse to do that cause they don't like things above them that could jump on them and kill them......
