Good and bad dressage trainers like anything else. Some force the head only , But the whole horse is not collected, like a bow. Real proper collection, I've seen it in my horse dancing on the hill. . .with his buddies
Dressage horses do have a rep. for having hock or stifle problems.

Have you never seen a dressage show? The beautiful supple movements of a well
schooled horse are certainly natural on the bit, and the ideal frame for any
horse to move in, most efficiently with the least impact.
