This was a very helpful post for me.  Thank you.  I am very new to this sport and have done two 25-milers on a borrowed horse.  I do, however, have a horse that I plan to prepare for the ultimate goal of doing 100 milers, if all goes well. I have been looking foward to this process for many years.  As a first step, I've just enrolled us in a clinic series that I hope will help us with spook issues for him and confidence issues for me.  The plan you outlinned is very similar to what I was thinking; you just helped solidify it for me.  I also plan to introduce him to cattle and do some penning and sorting.  He loves to play and I think this will help us learn to work as a team.  I am looking for to this new adventure.
