I am a professional trainer / clinician (it isn't my living, but it's a very profitable pastime).

I'd find another trainer. This time it's broken glasses and a
cut. Who knows what's next?

Trainers are paid to take a horse from Point A to Point B and
in so doing accept all the risks therein.

Deductible or not, her health insurance may not take kindly to
paying horse caused claims.
