It's vaulting. (I actually used to do it , on a dummy horse of course.)In the movie, it looked computer generated to me, at least partially. Something was funny there for a millisecond.(Laurie and Rascal)

I was watching part 1 of Warhorse on Discovery Channel (actually the series
has a different name, but the episode was Warhorse) and they showed a
"Hussar" who mounted a horse from the ground, and as far as I can tell, he
never touched the saddle.  I couldn't believe it, and replayed the scene
several times before I gave up trying to figure out how he did it.

His hand went around the neck, his feet went up and somehow he was in the
saddle.
