I haven't had as long a layoff as you, but I've noticed that if I haven't
ridden in awhile, even tho I've been doing other sorts of athletic stuff, my
legs & shoulder muscles are sore.
I would try to ride as much as possible, especially if you have more than 1
horse available to ride (after all, the horse has to rest!), short sessions,
working up to longer sessions to work those riding muscles.  I get a lot of
ribbing at home, but I found that my blue horse linament helps my sore
neck/shoulder muscles, better than stuff made for human muscle aches & pains.
For general stamina, jogging, bicycling, tennis can help.  One of the local
tack stores had a video on exercises to work riding muscles, don't remember
the name of it, but something like that might be helpful on bad weather days
when you can't ride.
