I've always thought wood-chewing is a habit that is copied from another horse.  We have, since the abolition of creosote use in CA, either nailed a metal cap on a hitching rail, pieces of sheetrock corner molding on the edges of boards, or wrapped mesh wire around a post or tree trunk.  Then again, there are pipe panels for paddocks...that really works.
