Whatever is easiest for each individual horse… within reason.  I’ve always heard it’s best not to always do an extended trot, it’s a good way to pull/strain something especially on hard dirt roads.  For your guy, and since you’re “aiming for your first ride”, I’m guessing the 7mph trot is a good thing to aim for.  Slow and steady is the name of the game.

Samurai has a sluggish (7mph) trot, a medium (9-10 mph) that he doesn't like to maintain, and a fast, floaty 12-13 mph that usually breaks into canter (though I'm quick to bring him back).

 

What should I be aiming for as we train for our first ride?
