Have you considered something like a Hi-Tie (sportack.com)?
I could be wrong but I think people usually have an alternative method if there are no trees (tying directly to the trailer or using a portable corral).
I'd be worried about tieing anything to the truck, especially a horse...I can't think of much on the truck, other than the hitch (too low anyway), that would be strong enough to hold a horse...I'd be in big trouble with my hubby if my horse ripped something off the truck. :)  I try to keep the horses away from the truck as much as possible :)
