Taste and texture. My guess is that Hickory Farms has a lot of filler. I can't eat them. The Old Wisconsin is more like actual pepperoni (There is as less spicy "beef" version as well).

Question, why Old Wisconsin and not Hickory Farms. I really am curious. I
don't eat a lot of processed meats and I like to find the healtiest I can.
If they come without nitrates and nitrites even better.
