I keep 4-5 horses on 7 acres.  If I can offer one suggestion it is to mow, mow, mow.  We have had this place for about 7 years now & the single biggest way to keep the paddocks and pastures nice is to mow mow mow.    I have 3 paddocks that I mow weekly, and 2 fields that are mowed about every 2 weeks, and in the spring and fall I weed/seed/fertilize.  It might be tempting to on "just" 5 acres to use a large riding mower, but use at least a trail mower type mowing deck. 
 
I think the second big thing for us is gravel gravel gravel.  I keep 2 small paddocks near the barns/sheds, heavily gravleleld for all weather.  The have a base of nearly 3" rocks, a covering of #2's and then every few years I throw whatever gravel I can get cheap over the surface.  Keeping the areas around barns and sheds from turning into swamps has saved alot of headaches in terms of scratches, lost shoes & general ickiness.
