So let me confirm what I think you are saying... to be safe, mix 'lytes with
pureed carrots because they're neutral?

How about yogurt, is it acidic or basic?  Does it depend on the flavor?

Many foods contain natural, healthy acids, not just vinegar.  By the way all
of the vinegar I have seen, sold for human consumption, is ultimately
derived from Apples, or wine.

A number of 'Lyte formulas contain basic ingredients like Calcium Carbonate.
If mixed with an acid carrier like applesauce, the acid will neutralize the
base.  In the formulations I use this happens relatively slowly.  If I mix
applesauce and 'Lytes by the next day it has changed color and is a bit
gelled.  Eventually, the carbonate will turn to carbondioxide gas and leave
the mix.

I used to use an electrolyte mix that had the Ca in the form of calcium
acetate.  This mix could be canned with the applesauce and save me the
mixing time on ride day.  Unfortunately, my currently preferred 'Lyte mix
has some basic components, and does not can because of the evolution of
carbondioxide over a few days.

Now, some foods are pretty neutral.  Carrots are one.  They will not react
with the 'Lytes so don't worry.  Now if you look into your home canning
books you will find that Apples, tomatoes and many fruits can be canned in a
water bath canner.  Other things like carrots, beans, chicken must be canned
in a pressure canner.  The reason is that bacillus Clostridium Botulinum can
not grow in a can if the pH is far enough on the acid side.  It can only be
reliably killed by the high temp of a pressure canner.  It is extremely
unhealthy (to the point of death) , to consume canned food containing C.
Botulinum and its toxin.

On the other hand, some people find that injections of this toxin inhances
their appearance.  Go figure!
