I've seen the same thing with my young ones as they get to be about 4 and are being trained with all the gear but no rider yet. They become intensely interested in the older horses who get to go out with riders and are actually very eager to join the "Big Guys" group. The really young ones like playing but the older not yet ridden horses come over to watch the whole process of tacking and leaving with great interest and sometimes try to sneak into the group leaving...always unsuccessfully.

Besides the "color" sorting, the working horses seemed to have a higher status than the rest. If one of them joined the workers, or an unbroke horse started under saddle, they moved up the pecking order.
Was a real lesson in "horse herd" social interaction.
