I don't think hay will be a problem, especially since you're using cubes 
which have been processed enough to kill weed seeds. You'll probably 
have more trouble getting any fresh fruits & veggies bought in NV in 
than horse feed. If you were going onto BLM or Nat'l Forest land then 
you'd need weed free hay which you will have anyway.

I've never taken one but I love his books and he is definitely a 
clinician I would sign up with in a heartbeat. I know someone who did 
take one of his clinics and loved it because he works with each 
participant individually.
