The old cowboy myth is that breaking the water or egg
or whatever over the horse's head makes him think he's
bleeding and he'll come down...

as Heidi would say, codswallop. My guess is the horse
wonders what the idiot on his back is doing when that
happens and the rider will be luck if the horse
doesn't panic further.
