I was truly surprised at how comfortable my hands were when riding the Death Valley rides some years ago. All I had on my hands were polypropylene glove liners. My hands stayed warm even when the gloves got wet.

I use wool but make sure the gloves aren't too tight or they will constrict the blood flow needed to stay warm.
