My husband, who does not ride, but cleans my stalls and feeds (bless him),
does not like to fool with catching horses.  He has what I refer to as his
liberty horse act.  Over a period of time, he teaches each one to go to his
large turn out pen in the morning and come back into the stall at night
without ever touching them.  Since they are turned out in sets of two, this
means working them through the gaits one at a time.  I'm always in a hurry,
and prefer leading them back and forth, but his method sure works and he
never lays a hand on them.  If one were hard to catch, he's be a lot easier
to halter in his stall. It doesn't take more than a few days for a new
horse to learn the routine.

And once he is in the enclosure, let him eat in peace without a hassle.
When he is done halter him.

It takes some horses a long time to adapt to new homes and people.  
Months,
or longer.   Be patient.

A catch pen!  Set up a couple of 16 x 16 panels in a corner, and feed
him
there.  Come with a goody, put it in the tub, and close the gate.  Don't
even TRY to catch him until he is in that small space.   :-)
